CARROT GINGER DRESSING

Makes 3 Cups

Ingredients:

1/2 cup unseasoned rice wine vinegar

3 tablespoons soy sauce

2 teaspoons sugar

2-inch piece fresh ginger, peeled and roughly chopped

2 large carrots, peeled and coarsely chopped

1/2 cup canola oil

Salt to taste

 

Directions:

Place all ingredients in a blender with 1/2 cup water and process until smooth. Serve over salads or vegetables. Can be kept refrigerated for 1 week.
