MUSTARD AND HERB CRUSTED SALMON

Serves 2

1 Tablespoon minced shallots

1 Tablespoon whole grain mustard

2 Tablespoons extra virgin olive oil

2 Tablespoon chopped chives

1 teaspoon fresh ground pepper

1 teaspoon sea salt plus more to taste

2 6 oz Salmon Filets, skin removed

 

In a small bowl, combine shallots, mustard, olive oil, chives, 1 teaspoon salt and 1 teaspoon pepper and blend to make marinade.

Evenly distribute marinade on 2 salmon steaks (top of salmon only) and refrigerate for 30 minutes. Place salmon on broiling rack and broil on med/high for 7 minutes or until salmon is cooked medium rare. Salt to taste.

 Serve on bed of fresh arugula tossed with lemon, olive oil and grated parmesan cheese.
