Marinated Butter Bean and Escarole Salad

This versatile salad is packed with protein, veggies and herbs and comes together in less than 5 minutes. Add seared fish, sautéed shrimp, tuna or grilled chicken to make this meal even more satisfying.

Prep Time: 3-5 minute


1 15.5 ounce can butter beans, drained and rinsed

1 cup cherry tomatoes, halved through the stem

3 mini cucumbers, chopped

1 cup parsley leaves

2 teaspoons lemon zest

2 tablespoons lemon juice

1/4 cup extra virgin olive oil

3 cups chopped lettuce (escarole, romaine, or whatever you have)

3 hard boiled eggs, halved

2 tablespoons mixed toasted seeds (sesame, sunflower, or chopped nuts)

Kosher Salt

Ground black pepper


In a large bowl, stir to combine butter beans, tomatoes, cucumbers, parsley leaves, lemon zest, lemon juice, olive oil, salt and pepper.

Place lettuce in a bowl and top with butter bean and tomato mixture. Place eggs on salad and sprinkle with toasted seeds, salt and pepper.
