Creamy Lemon and Olive Oil Dressing
2 large egg yolks
2 tablespoons lemon juice (about 1/2 large lemon)
2-3 dashes Worcestershire sauce
1 teaspoon dijon mustard
1/2 cup extra virgin olive oil (a good one!)
Ground black pepper
In a blender, combine egg yolks, lemon juice, Worcestershire sauce, mustard 1/4 teaspoon salt and a pinch black pepper until smooth. With the motor running, slowly drizzle in the olive oil until dressing is thickened. Season well with salt and pepper to taste.
