Grilled Skirt Steak with Chimichurri

Total Time: 10-12 minutes
1 1/2 pounds skirt steak
2 tablespoons extra virgin olive oil
Ground black pepper
Flaky sea salt (optional)
Chimichurri for serving (see recipe below)
Preheat grill pan or outdoor grill over medium high heat. Season steak well with salt and pepper, drizzle with olive oil, then place on hot grill. Cook about 4-5minutes per side for medium rare.
Remove steak from grill and set aside to rest for about 5 minutes. Sprinkle with flaky sea salt and slice into thin strips on a bias to serve.

1 small bunch parsley, roughly chopped
2 tablespoons red wine vinegar
1/3-1/2 cup good quality extra virgin olive oil
3/4 teaspoon kosher salt, plus more to taste
Pinch ground pepper
Pinch red chili flakes (optional)
In a food processor, combine all ingredients, blending until almost smooth. Serve with meat, chicken, fish or vegetables.
