Fire Roasted Kabocha Squash

Total Time: 45-60 minutes

Ingredients:

1 3-pound Kabocha Squash

Extra virgin olive oil for drizzling

Flaky sea salt or Kosher salt

Directions:

Build a fire in a grill. When the coals are hot and the fire has burned down, place squash directly in coals. Cook until charred and squash is tender when pierced with a sharp knife, about 15 minutes per side.

Use tongs to remove squash from fire and smash semi-gently with the bottom of a pan or use a knife to peel off charred skin and discard. Drizzle squash with olive oil and season with salt.
