2 tablespoons extra virgin olive oil

3/4 cup finely grated parmesan cheese

1/2 teaspoon kosher salt

1/2 teaspoon cracked black pepper

1 teaspoon favorite seasoning blend (chicken seasoning, Italian, etc.)

2 1/2 pounds small white potatoes, cut in half

Sour cream 


Preheat oven to 400 degrees F.  Drizzle oil into 9x13 baking dish to completely coat bottom.

In a medium bowl, whisk to combine parmesan cheese, salt, pepper and seasoning blend, then evenly coat bottom of dish with the cheese mixture. Place potatoes, cut side down, onto cheese. 

Bake potatoes for 35-40 minutes until cheese is crisp and golden and potatoes are tender. Let cool for 5 minutes, then use a spatula to remove potatoes from dish, making sure to scrape under the cheese layer so that it stays on the potatoes. Serve with sour cream on the side.
